In the Czech kitchen: Bublanina, a summertime berry sponge cake

Learn how to make an easy Czech summer classic

Did you know that the red of strawberries, raspberries, and redcurrants give two summer months, červen (June) and červenec (July) their name? (Červený is Czech for red.)

Fresh berries can be bought from around March to September thanks to imports. But the window of opportunity for garden-fresh is quite small. One terrific use for your bumper crop of berries is in a Czech cake called bublanina or “bubble cake”.

Czechs commonly make a cherry version of this summer sponge cake, but a mixed berry bublanina is also delicious.

Our reader Eva Indruchova, a Prague native and the founder of Happy Baking Tradition page, which offers traditional Czech recipes in the English language, shared her recipe for this summertime favorite.

I concentrate mainly on Czech traditional sweet recipes I have baked since my childhood, very much influenced by both of my grandmothers,” says Indruchova.

Here is her grandmothers’ recipe for a Czech classic that’s easy even for those who don’t bake much or want to start trying Czech recipes.

Bublanina

Ingredients

3 eggs
130 g of sugar (1 cup)
215 ml of cream (nearly 1 cup)
320 g of flour (2 1/2 cups)
1 packet of baking powder (12 g)
Summer fruit of choice

Instructions

Beat together the eggs with the sugar and stir in the cream.

Combine the flour and baking powder then gently fold into the egg mixture.

Pour into a lightly greased cake pan that has been dusted with flour (or use parchment paper).

Top with a layer of your choice of fruit (such as cherries, strawberries, blueberries). Bake at 180°C until golden.
