Why I like this recipe:
“This salad was one of my favorite dishes when I lived in the Hamptons in New York in my early twenties. Originally an Italian dish, the recipe comes from a restaurant called Robert´s in Watermill, NY, where head chef Natalie and her cuisine are just out of this world. The preparation is easy, very fast and healthy to boot – fennel is a good source of vitamin C and antioxidants and aids digestion. And even though the Hamptons are a famous summer destination, the salad is also enjoyable in the winter!”

Ingredients:
- 2 fennel bulbs, sliced
- 2 red onions, sliced
- 2 oranges
- Extra-virgin olive oil
- Fresh Parmesan cheese
- Aged balsamic vinegar
Combine the fennel and red onion in a salad bowl. Peel the oranges, divide into segments and add to the bowl. Drizzle with olive oil and gently toss. Serve on salad plates topped with Parmesan cheese shavings and finished with the aged balsamic vinegar. This salad goes very well with white wine. Actually, with any wine. Well, scotch on the rocks works, too.
