Breeding cattle is a Czech tradition that is many centuries old. The forbears bred the so-called ‘Czech black-and-white spotted cow’ (“Cestr” is an abbreviation of the Czech name for this breed). In those days, master butchers matured beef and created many cuts that have almost been lost to the present day – but we have rediscovered these and bring them to your table.
